English blue cheese made by Joe Schneider using organic cow’s milk from Collingthwaite Farm in Nottinghamshire. The name Stichelton is taken from the original name of the village of Stilton, used in the 13th Century Lincoln Rolls. Despite being made to a traditional Stilton recipe, the cheese cannot use the name Stilton as it is made with unpasteurised milk.

- Flavor: Cool and buttery with underlying nutty toasty notes. With a spicy element from the blue mould but alongside that is a long lasting savouriness and caramel-like sweetness.
