Dover sole are long and elliptical with darkish skin, with daily catches by our fishermen in the waters off France, Belgium, and The Netherlands. They are world-renowned in the culinary world for their exceedingly delicious flavour – white, mild, and sweet with a nice flake. You’ll find them like their cousin plaice, but more delicate in flavour.

 

We already removed the tough skin of your dover sole. Poach, steam, grill, broil, sauté or bake it whole to achieve the best results. You may also fillet it and gently pan-fry or sauté it. Although the flavour is delicate, it is very well suited to buttery, rich sauces.

 

Dover sole is packed with protein, niacin, vitamins B12 and D, phosphorus, potassium and magnesium. It is also a nice source of omega-3 fatty acids.
