They are caught in the North Sea at the end of May and beginning of June, while they still have some of their winter fat in them.
Dutch “Maatjes” Herring
You can eat Dutch herring with knife and fork but here is the coolest, most traditional way to have them. Pick the maatjes herring up by its tail (never mind the chopped onion falling on your face), raise it above your head and take a big bite.
